Have you ever been planning out your meals for the week and realized that you have spinach just hanging out in your fridge that needs to be eaten, like now? Well well, have I got the perfect recipe for you! I’ve got the best strawberry spinach salad plus honey poppy seed dressing recipe that is the most delicious and fresh thing that you’ve ever tasted… Seriously!

WHAT GOES WELL WITH STRAWBERRY SPINACH SALAD

While this salad can seriously go with anything, there are a few recipes that I’ve made time and again that go really well with it! My favorite brown sugar slow cooker ham recipe goes great with the strawberry spinach salad. Pair that with some roasted carrots and mashed sweet potatoes and easy cheesy scalloped potatoes and you’ve got a delicious meal!

NOTES TO MAKE THE SALAD

This salad is pretty shelf cooking friendly! While it calls for strawberries, feel free to use any berries that you have on hand that need to be used up. The same goes for the mozzarella cheese – you can use whatever type you have on hand (such as shredded, chunked or balled) or you can substitute it with another cheese such as feta or parmesan.

I've also included how to make some sugared almonds, but feel free to switch those out with whatever you've got since nuts are so darn expensive! There's no need to run to the store and drop your dollar bills on some almonds if you've got perfectly good pecans or walnuts at your house.

Strawberry Spinach Salad with Poppy Seed Dressing

Ingredients
  

Strawberry Spinach Salad

  • Fresh baby spinach
  • Fresh strawberries, sliced in half
  • Mozzarella cheese

Sugar Toasted Almonds

  • ½ cup sliced raw almonds
  • 1 Tbsp butter
  • 2-3 Tbsp white sugar

Poppy Seed Dressing

  • ¾ cup white sugar
  • ½ cup honey
  • 1 tsp paprika
  • 1 tsp mustard
  • 1 tsp onion, finely grated
  • ½ cup lemon juice
  • 1 cup vegetable oil
  • 1 tsp poppy seeds

Instructions
 

Strawberry Spinach Salad

  • Eyeball all the salad ingredients according to your desired taste! It's a salad, don't stress! Top with almonds, and serve dressing on the side.

Sugar Toasted Almonds

  • Melt butter over medium-low heat. Add almonds and sugar. Saute until sugar has melted and everything has incorporated, but watch carefully so they don't burn! Cool on parchment paper, then add to salad.

Poppy Seed Dressing

  • Mix all ingredients, except oil and poppy seeds, in a blender (*note). Gradually add oil and poppy seeds and continue blending. Serve with salad. Refrigerate remaining dressing for later use. Keeps 3 weeks.

Notes

*If you don't have a blender, no worries! Mix the dressing together as best you an in a bowl or shake it in a jar with a lid. You can also make it in a salad dressing shaker. The consistency won't quite be the same, but it'll still be just as delicious!

Seriously, it's SO easy to whip up! The instructions for the dressing do call for a blender. If you don't have one, you can simply grab any ole glass jar with a lid or a salad dressing shaker and shake away! The consistency will be a little different, but no one will know if you don't tell them!
