Strawberry Spinach Salad with Poppy Seed Dressing

A simple delicious salad that will please even the pickiest eaters!

Ingredients

Strawberry Spinach Salad

  • Fresh baby spinach
  • Fresh strawberries, sliced in half
  • Mozzarella cheese

Sugar Toasted Almonds

  • 1/2 cup Sliced raw almonds
  • 1 Tbsp Butter
  • 2-3 Tbsp White sugar

Poppy Seed Dressing

  • 3/4 cup White sugar
  • 1/2 cup Honey
  • 1 tsp Paprika
  • 1 tsp Mustard
  • 1 tsp Onion, finely grated
  • 1/2 cup Lemon juice
  • 1 cup Vegetable oil
  • 1 tsp Poppy seeds

Instructions

Strawberry Spinach Salad

  • Eyeball all the salad ingredients according to your desired taste! It's a salad, don't stress! Top with almonds, and serve dressing on the side.

Sugar Toasted Almonds

  • Melt butter over medium-low heat. Add almonds and sugar. Saute until sugar has melted and everything has incorporated, but watch carefully so they don't burn! Cool on parchment paper, then add to salad.

Poppy Seed Dressing

  • Mix all ingredients, except oil and poppy seeds, in a blender. Gradually add oil and poppy seeds and continue blending. Serve with salad. Refrigerate remaining dressing for later use. Keeps 3 weeks.
