Foodie Tuesday recipe: Grandma’s Easy Chicken Pot Pie

Happy Tuesday!
Today I'm going to share a ridiculously easy recipe with you.
I have a confession to make, actually…
It was SO EASY to make, that I didn't even bother to take a picture of it because I figured it wouldn't taste good enough to share the recipe.
I was wrong.
My dear sweet Grandma Mary Webster passed away not too long after I was married. We found out she had stage 4 pancreatic cancer, and she was gone 3 weeks later. 
I really took having a Grandma for granted, and I really feel a void in my life as a mother and wife. Man, I wish I had my Grandma to call to teach me why something of mine exploded in the microwave!
Anyway…
My Grandma was a great cook. Her recipes weren't anything profound, but her love POURED into her cooking, which made it amazing. For Christmas one year my Aunt Allison went through my Grandma's most used recipes and compiled them into a cook book. This recipe was in that book, so it's extra special to me.
Another great thing about this recipe is that it's one of those meals that you can make using all pantry items.  The other week I was naughty and went over budget. So for the next two weeks I made it a point to not go grocery shopping…AT ALL…in order to balance out my over-spending. 
I decided to cook my meals using ONLY things I have on-hand in the pantry, fridge, and freezer. Other a gallon of milk, I didn't buy a thing. Luckily I freeze everything (get some ideas HERE). This is one of the awesome meals I was able to come up with!

Grandma's Easy Chicken Pot Pie

Ingredients:
1 2/3C Frozen mixed vegetables, thawed
1C Cut up chicken (canned or fresh…I used canned)
1 (10.5oz) Can cream of chicken soup
1C baking mix (like Bisquick)
1/2C Milk
1 Egg
Seasonings to taste (I added lots of seasonings – rosemary garlic (my fav), a little poultry seasoning, ground pepper, salt, and extra rosemary.)

Directions:
Heat oven to 400 degrees. Mix veggies, chicken, and soup in an ungreased 9-in pie plate or baking dish. Stir remaining ingredients together until well blended. Pour into pie plate. Bake 30 minutes or until golden brown.

See? Isn't that easy? Make extras, freeze them, and give them to neighbors or new moms. Happy eating!
