Peanut Butter Fudge Recipe

This peanut butter fudge recipe is sure to make you the life of the party. Why buy the expensive stuff from the speciality shops when you can make your own for cheap? It makes great gifts and is a delicious "just because" treat.

Ingredients

  • 3 cups sugar
  • ½ cup butter
  • cup (5 oz.) evaporated milk
  • 1 ⅔ cups peanut butter
  • 1-7 oz jar marshmallow creme
  • 1 tsp vanilla extract

Instructions

  • Line a 9x9 pan with foil, leaving the ends of the foil extended over the sides (so you can easily pick it up out of the tray once it sets). Spray foil with cooking spray. There's nothing sadder than your fudge sticking to the foil!
  • Bring sugar, butter and milk to a full rolling boil over medium heat, stirring constantly.
  • Reduce heat and simmer until a candy thermometer reaches 234°F, stirring constantly. Keep the candy thermometer in the middle of the pan and don't allow the tip to touch the bottom or sides of the pan for a proper reading. This usually takes around 5 minutes!
  • Remove from heat and mix in peanut butter.
  • Add marshmallow creme and vanilla. Beat until well blended.
  • Pour into the prepared pan and allow to cool. You can leave it on your counter or stick it in the fridge to help speed it along!
  • Remove foil from the pan, remove the fudge from the foil (unless you want bits of foil in your fudge!), and cut into bite-sized pieces.
  • Enjoy! Good luck not eating it all in one sitting.

Notes

This fudge will keep best if it's stored in the fridge in an airtight container for up to a week.
You can also freeze it for a few months, so it's an easy way to prep some treats ahead of time! Allow it to fully cool, then cut it into bite-sized pieces and wrap in cling wrap. Store it in an airtight container in the freezer.
When you're ready, pull the fudge out and thaw in the fridge for a few hours. Voila! Homemade peanut butter fudge that tastes just as good as the day you made it.
