Sweet Potato Breakfast Hash Recipe
Easy and delicious sweet potato breakfast hash made with simple ingredients that are packed with nutrition and can be made ahead for busy mornings!

Ingredients

sweet potato
½
onion
diced

Tbsp
oil

Tbsp
minced garlic
Hard-boiled, scrambled, or fried egg
Salt & pepper to taste
Instructions
Wash and cube up sweet potato (can peel, optional)
Sauté onion in 3 Tbsp oil on medium high heat with 1 Tbsp minced garlic for 1-2 minutes, until onion begins to get soft and translucent.
Add sweet potato and cook until potatoes have reached desired softness.
Transfer into bowl of choice, top with egg.
Season with salt & pepper to taste.
Notes
Can freeze potato mixture for later. Just warm in the microwave and top with a fresh egg!
