Welcome back to Foodie Tuesday! I have some creative recipes for you today to keep you from throwing out any cooked pasta that might otherwise go to waste!
Last week my husband had a big company party. He had nearly 30 people there, so to cut costs we made the food ourselves. 
We decided to do rotini and fettucini pasta with alfredo and marinara sauces, salad, rolls, and everyone contributed desserts. (Very similar to my son's birthday party, remember HERE?)
The food was simple, but good, and we all had a blast. Especially my little guy:
However, as usual after a party, there was a TON of cooked, plain pasta and sauce left over! After my son's party we threw most of it away. This time I wanted to get creative…so here's what I came up with!
Recipe #1:
(Sorry, I didn't take pictures…I didn't expect it to turn out so good! This is the recipe I made for our double-date, mentioned HERE)
Leftover Rotini Bake
Here's what you need:
Leftover Rotini or small tube pasta (at least 12 oz)
1lb Ground Beef
Garlic to taste
Leftover spaghetti sauce (or a 26oz jar)
Leftover alfredo sauce (optional)
2 Eggs, slightly beaten
1 Carton (16oz) cottage cheese
Mozzarella cheese (at least 2 cups…we like lots, though!)
Parmesan cheese (at least 1/2 C, but I recommend adding more!)
Anything else you need to use up from your fridge: chopped spinach, chopped veggies, onion, etc.
Here's what you do:
Preheat your oven to 350 degrees.
Brown your ground beef with garlic. If you have any leftover veggies you need to use up, chop them small and add them to the ground beef as well until everything is cooked.
Add spaghetti sauce to ground beef mixture and let it simmer for a little while. Add seasonings to taste – pepper, basil, Italian seasonings, etc. If you have any alfredo sauce to use up, add this as well! Start with a 1/2 C or so, just eyeball it. Add more or less to taste. It makes it creamy and good, and uses up any sauce that you need to get rid of!
In a large bowl combine eggs, cottage cheese, at least 1C mozzarella, and parmesan cheese (I added a little leftover alfredo sauce to this mixture as well, to taste). Heat up your leftover pasta in the microwave for a few minutes. Gently fold the heated pasta into the cheese mixture.
Spread 1/3 of the beef mixture into the bottom of a greased pan. (You will need at least a 9×13, but I used an even bigger one because I had a ton of sauce and pasta leftover!) Place half the pasta mixture over the beef. Layer another 1/3 of beef mixture over the pasta. Layer remaining pasta on top, finishing with the last of the beef mixture.
Cover and bake 40 minutes
Uncover, sprinkle with remaining mozzarella cheese, return to oven and bake 5-10 minutes longer or until cheese is melted and slightly browned. It is like a rotini lasagna, it's so hearty and good!
(this is the only picture I thought to take. It looked much better when it was fresh out of the oven, but you get the idea from our leftovers here! Haha, sorry :))
****A few notes:
I didn't measure anything. I simply eyeballed it all because most of my ingredients were leftovers. You can't really go wrong! I bumped my heat up to 375 for most of the cooking, because I needed it to bake faster. I apologize again about the unappealing picture; I promise this was super good!
(You can obviously make these recipes without using leftover ingredients, by the way.)
Recipe #2:
Leftover Sausage and Pepper Fettucini

Here's what you need:
Olive oil
Bell peppers (just whatever you have in your fridge or freezer)
Leftover fettucini pasta
Sausage (I used kielbasa that I needed to get out of my freezer, but you could use Italian sausage or whatever you like!)
Leftover alfredo sauce or sour cream
Anything else you need to use up: Tomatoes, peas, onion, garlic, other veggies, etc.
Seasoning to taste
Here's what you do:
I chopped up about 1/2 an onion, the sausage,
and the bell peppers.
I heated up some olive oil in a pan on medium-high heat, added a heaping spoonful of minced garlic,
 browned the sausage for a few minutes, then added the diced veggies. 
Add seasoning to taste. I wanted mine a little spicy so I added roasted garlic & herb seasoning, as well as red pepper flakes (highly recommended!). You could also do a little cayenne pepper.
I sauteed the sausage and veggies for a few minutes until the meat was cooked and the veggies were getting soft. I turned the heat to medium, added a few handfuls of frozen peas, 
And 2 diced roma tomatoes. 
I added some leftover alfredo sauce that I needed to use up. I eyeballed it, just added about 1/2C or so to start. If you don't have alfredo you could simply add a little vegetable or chicken stock, cream, or even sour cream. I didn't want mine very “soupy” so I didn't add a huge amount of sauce.
Let this simmer on medium to medium-low for a little while until it's the consistency you like, stirring occasionally. 
Heat up your leftover fettucini in the microwave for a few minutes until heated through. I put 1/2 the noodles in a big bowl (I didn't know if my noodles to sauce ratio would work out, so start with half at first!), layered 1/2 the meat mixture, and added some parmesan cheese to taste.

I repeated the layers, tossed it all together, and enjoyed. It was seriously so good and had nice spice to it!

My husband LOVED this and we will definitely make it again. The best part? I used up everything form my fridge! Woo hoo!
(Though…I'm a little “pasta'd out” for a while…)
