I mentioned on Instagram recently that I discovered the BEST chicken recipe. Only 4 ingredients, 5 minutes to prepare, and is so delicious it's a new family favorite. I promised to share, so here it is!
But first, here's how I discovered this recipe…
I met this adorable mom, Lindsay, who's daughter is in the same dance class as my Priya. We chatted it up during dance one day, immediately hit it off, exchanged numbers (yes, it sounds like I'm picking up a date). Not only are our personalities very similar, but we have 4 kids…the same ages AND genders. Guys, the chances of that happening are basically one in 1-gazillion.
We invited her family (and another couple) to dinner Sunday to get to know them better. As I learned more about Lindsay and her family I learned she's a healthy foodie Instagrammer (with a fabulous feed that you should all check out!).
“Oh no…”, says the girl who eats chips for breakfast and can't cook to save her life.
I found myself getting intimidated, thinking I needed to do a super fancy meal that was all organic, fat free, and grown in my back yard. After taking a breath I realized I was being a diva. I ate a Snickers, felt better, and turned to Pinterest for a new recipe to try. I stumbled upon this recipe and it's AMAZING guys! It's only 4 ingredients (all things I had on-hand), and I was able to prepare it early in the morning which made for stress-free entertaining.
Here's how to make this incredibly Easy Garlic Brown Sugar Chicken recipe:

- 4 large boneless skinless chicken breasts
- 4 garlic cloves minced (or 3T minced garlic from a jar)
- 4 Tablespoons brown sugar
- 1 Tablespoon olive oil
- Additional herbs and spices as desired (I added rosemary, herbs de provence, and a little thyme)
- Preheat oven to 425 degrees
- Spray a baking pan or cookie sheet with cooking spray
- In a small saute pan, saute garlic in oil on medium heat until tender.
- Remove from heat, stir in brown sugar. Add additional herbs and spices as desired.
- Season chicken with salt & pepper. Place chicken in pan, cover with garlic mixture. (I poked my chicken a few times with a fork so the sauce would get down inside it. Not sure if that's good advice or not, but that's what I did! :))
- Bake uncovered 15-30 minutes depending on the thickness of your chicken, until juices run clear.
The recipe calls for 450 degrees but I felt like that was REALLY hot for chicken. Low and slow, baby! So I kicked it down a notch and it still cooked just fine, and was moist and juicy.

The chicken breasts I used were HUGE. I cut them in 1/2 – 1/3 pieces so they were more like large chunks. It ended up being the perfect portion size.
We had church that day so I quickly prepared the chicken before church, put the lid on the pan, and kept it in the fridge until it was time to bake the chicken. Easy peasy.
I served it with brown AND white rice (boiled on the stove with some chicken bouillon for flavor), corn on the cob, and an incredible salad and watermelon Lindsay brought. We ended up spooning the brown sugar sauce over the rice and it was delicious.
For dessert I made Diet Coke Cake (recipe coming soon!) and snow cones with our snow cone machine (random, but always a hit with the kiddos).
The whole meal, but especially the chicken, was a huge hit…even by all the kids! (All 8 of them, who were all 6 years and under…which is why they aren't pictured because they were all running wild outside.)
This was the easiest recipe I've made in a while, and it's definitely going in my favorite recipe notebook to make again and again!
