As you read in my first post, we had a family of 5 over for dinner on Sunday…on a whim…without having gone grocery shopping at all that week. Potentially a BAD idea, but it turned out amazing! It forced me to get creative and search my pantry, fridge, and freezer for ingredients I had on-hand, to feed 4 adults, 2 teens, 1 tween, and 4 little kids a full-blown, homemade ham dinner! It turned out amazing. I made Brown Sugar Slow Cooker Ham, roasted carrots & mashed sweet potatoes, Easy Cheesy Scalloped Potatoes, a Chocolate Bundt Cake with caramel drizzle, and Strawberry Spinach Salad with homemade Honey Poppy Seed Dressing! Yes, you read that right. (And I don’t even like to cook!)

Brown Sugar Slow Cooker Ham:
As you read in my first post, I dug through my freezer to see what I had on-hand. I found a big ham that I had price-matched around Easter time and stuck, whole, in my freezer. I unwrapped it and plopped it straight in my slow cooker! I had never made slow cooker ham before, especially not from frozen. It turned out great! Mine ended up having lots of liquid in it, as I added lots of water because I was worried it would dry out. It turned out perfectly fine! I sprinkled a little extra brown sugar over the slices when we were ready to eat, to add more sweetness and flavor.

- 2 cups brown sugar, packed
- 1 bone-in ham (mine wasn’t spiral cut, but you could ultimately choose any kind!)
Spread 1 ½ cups of brown sugar on the bottom of your slow cooker (mine was completely frozen when I put it in!). Place ham in slow cooker, on top of brown sugar (trim the ham to fit if it’s too large). Take the remaining brown sugar, and rub it on the top of the ham. I added about 1/2 C water to the crockpot to keep things moist. Cover and cook on low for 6-8 hours, or until warmed through.
Once warmed through, remove from slow cooker, and slice. Sprinkle additional brown sugar on sliced ham before serving for extra sweetness and flavor.

So easy, so delicious, and perfect dinner for a busy day! Remember, ham is fully cooked so all you’re doing is heating it through…making the crockpot the PERFECT, hassle-free way to make it hot and ready to eat (especially since having the oven on all day can really heat up your house!).
