Have you ever heard of Freezer PB&J Sandwiches? No? I hadn't either. But I made them up (in my own world, anyway) and they are SAVING MY LIFE so I had to share!

My kids are obsessed with Peanut Butter and Jelly Sandwiches and ask for them every. dang. day. As I'm frantically running out the door trying to get 4 kids and myself dressed, grab a million bags and bottles, and get to where we are going on time (snort…yeah right), I realize “shoot, I forgot to make a lunch for everyone”. I either grab my wallet and succumb to the drive through, or I make us 5-10 minutes late(er) by stopping everything to make sandwiches and pack an on-the-go lunch.

I finally wised up and figured out the best lunch hack EVER!

Again, I'm sure I'm not the first to come up with this, but I'm proud of myself for thinking it up all on my own so you're going to sit here and golf clap as I pat myself on the back, mmmmkay??

Here's how you make Freezer PB&J's for the WEEK and save yourself inordinate amounts of time (and sanity!):

Step 1: GATHER THE GOODS

First things, first — you need to gather your ingredients! The best part about this hack is I bet you have everything you need just waiting in your pantry!

  • Sandwich Bread
  • Peanut Butter
  • Jam/Jelly
  • Sandwich-Size Plastic Bags

Ps you must also notice and appreciate the sweet price I got on this PB, thanks to my price-matching magic. The jam is from Costco (see all my Costco tips HERE) and was too chunky for my kids initially (it has lots of cherry chunks in it). I dumped it into a food processor and pulverized it and BAM. Perfect consistency.

STEP 2: ASSEMBLY LINE

Stay with me, this is reeeeeeally complicated (snicker).

Get an entire loaf of bread, lay it out in a line, estimate how many sandwiches you will need for the weekand go nuts! Get your kids involved and have them help! Sure, it might get messy. But it's more about empowering them, teaching them skills so they can make their own lunches, and creating memories together. My goal is to do this each Sunday and have it be a Sunday tradition.

Tip: we like to put peanut butter on both sides of the bread; partly because it helps keep the bread nice and soft, and also, because…well…it's peanut butter. And I could swim in that stuff.

STEP 3: FREEZE YOUR PB&J'S

Stick your sandwiches in individual baggies, and pop those babies in the freezer! Unlike this picture, one thing you might want to do is stick the individual baggies inside a freezer ziplock to keep them extra fresh until you need them.

Then, on a busy morning grab as many sandwiches as you need, and run out the door! They will be thawed and perfect by lunchtime.

And there you have it!

Honestly, you are going to love having a stash of these in your freezer. Such a simple idea but really will help save you so much time and money over time. I haven't tried this yet with any other kind of sandwich, but I plan to try it with a ham and cheese and see what happens. Heck, I freeze bread, ham, and sliced cheese in my freezer…so why not stick them together and see what happens?

My husband packs cold lunch everyday and I have done both pbjs and meat and cheese sandwiches and they freeze great!:) I found some mini mayo and mustard squueze bottles that I fill for the lunch box. Also have done homemade pizza pockets with pizza fillings, or beef and cheddar:) Deff. need to b doing this again!:)

  2. Yes, I do this for hiking and outdoors activities. The meat stays cold enough from being frozen and it’s thawed by lunch.

  4. Perfect timing, Kroger just had a 99 cent sale on their Nature’s Own wheat bread! I’ve been looking at freezer meals/snacks since I have a baby due in April too. Anything to make food a little easier around the house for the first few months! Plus, who wouldn’t love a PBJ in the middle of the night during a feeding session lol

  5. We make our own uncrustables using the pampered chef ravioli cutter and freeze them. Stick it to the man!
